In mid\/late fall, after a few light frosts, dig the roots up and keep them in cold storage for 6-10 weeks. After that, you can place the roots into a large, deep pot filled with a light potting mix, leaving about an inch of the root sticking out. Lightly water the soil and keep them in a warm place in complete darkness; any light will cause the chicon to become bitter.
