Bok Choy/Pak Choi 'Joi Choi'
Brassica oleraceae var. chinensis 'Joi Choi'
Joi Choi is a variety of Bok Choy or Pak Choi that produces thick, sweet, white stalks topped by dark-green leaves. They can only be harvested once, so plant every few weeks in spring or late summer for a continuous harvest.
Bok Choy or Pak Choi can be harvested once the leaves reach a usable size. You can pull outer leaves off and use them as needed, or harvest the whole head at once. Bok Choy or Pak Choi bolts quickly once the temperatures warm and will turn bitter. If you see flower buds forming, harvest immediately.
Bok Choy or Pak Choi grows best in full to part sun with fertile, consistently moist, well-drained soil. Remove weeds so they do not compete for water and nutrients. Consider adding organic matter to your soil to improve drainage and add nutrients.

Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
