Callaloo Jamaican Green
Amaranthus viridis
Produces a broad, green leaf that looks similar to spinach and has a slightly bitter, nutty taste. Can be eaten fresh or cooked into soups, stews, stir-fries, etc.
The leaves can be harvested at any time; the younger foliage will be more tender.
Callaloo grows best in full sun with fertile, well-drained soil that is consistently moist, not soggy.
Seasonal Availability: Typically available April through June, depending on suppliers availability.
Characteristics
Hardiness: Non-Hardy/Annual
Does Not Require Cross-Pollination
Care
Full sun outdoors (6-8+ hours of direct sun)
Keep soil moist, but not soggy.
If it is planted in a pot, it should have a drainage hole to reduce the likelihood of root rot caused by water accumulating in the bottom of the pot.
Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
