Celery
Apium graveolens var. dulce 'Utah 52-70 R Improved'
This vigorous variety of Celery produces tall, sturdy stalks that are sweet and crunchy.
Water your celery the day before harvest; this will give you the best flavour and storage ability. You can harvest the stalks on the outside of the plant at any time, and the entire plant can be pulled once it reaches your desired size.
Celery is a cool-season crop and prefers spring and fall temperatures. It grows best in full sun with consistently moist, fertile, well-drained soil. Celery has shallow roots and does not tolerate long periods of drought. Use mulch to help conserve soil moisture and keep roots cool.
Seasonal Availability: Typically available April through June, depending on suppliers availability.

Full sun outdoors (6-8+ hours of direct sun)
Keep soil moist, but not soggy.

Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
