Cichorium endivia 'Eros'
Escarole is a mildly bitter leafy vegetable in the same family as endive. It can be used as a lettuce substitute, braised, roasted or used in soups and stews.
Harvest your escarole once the heads are about 5"-10" wide and firm. Cut the whole plant off at the base. A light frost will enhance the flavour.
Escarole grows best in full sun with fertile, consistently moist, well-drained soil. Consider adding organic matter to your garden to improve drainage and soil fertility.
Seasonal Availability: Typically available March through June, depending on suppliers availability.

Care
Full sun outdoors (6-8+ hours of direct sun)
Keep soil moist, but not soggy.
If it is planted in a pot, it should have a drainage hole to reduce the likelihood of root rot caused by water accumulating in the bottom of the pot.
Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
