Fennel 'Bronze'
Foeniculum vulgare 'Purpureum'
Bronze Fennel features distinct bronzy-red foliage that has an interesting licorice flavour. If left to flower, the seeds can be harvested and saved. This variety does not produce a bulb, just a large taproot. As a bonus, the flowers are attractive to pollinators.
You can harvest the foliage of fennel at any point during the growing season, as long as you are not removing more than 1/3 of the foliage. If harvesting the seeds, wait until they begin to turn brown. Keep in mind that once the plant begins to flower, the foliage and stems become inedible.
Fennel grows best in full sun with fertile, well-drained soil that is consistently moist, not soggy. Consider adding organic matter to your garden to improve drainage and soil fertility.
Seasonal Availability: Typically available April through June, depending on suppliers availability.

Keep soil moist, but not soggy.
If it is planted in a pot, it should have a drainage hole to reduce the likelihood of root rot caused by water accumulating in the bottom of the pot.
Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
