
Summer Savory
Satureja hortensis
Summer Savory is the annual cousin of winter savory. Its flavour is described as a peppery mixture of oregano and thyme, with a slight hint of mint.
Harvest your summer savory as needed throughout the growing season, but do not remove more than 1/3 of the foliage at a time. This ensures the plant has enough energy to keep growing. Summer Savory is best harvested before flowering, as the leaves will have the best taste.
Summer Savory grows best in full sun with fertile, moist, well-drained soil. Consider adding organic matter to your garden to improve drainage and soil fertility.

Full sun outdoors (6-8+ hours of direct sun)
Let top 1-2" dry out before watering again.
If it is planted in a pot, it should have a drainage hole to reduce the likelihood of root rot caused by water accumulating in the bottom of the pot.
Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
