
Watercress
Nasturtium officinale
Watercress is a leafy perennial with foliage that has a peppery flavour, great for salads, soups and garnishes.
Harvest watercress as needed throughout the growing season, but do not remove more than 1/3 of the foliage at a time. This ensures the plant has enough energy to keep growing. Young leaves and stems have the best taste as long as they are harvested before flowering. The pepper strongest is best during cool weather, in the spring and fall.
Watercress grows best in full to part sun in shallow water or wet soil. If you are growing it in a container, consider placing the pot in a larger bucket with a few inches of water so your soil stays consistently moist.

Care
Full sun outdoors (6-8+ hours of direct sun) and Part shade outdoors (4 hours of direct sun)
Keep soil moist, but not soggy.
If it is planted in a pot, it should have a drainage hole to reduce the likelihood of root rot caused by water accumulating in the bottom of the pot.
Increase watering in the heat of summer and watch for wilting or browning as signs to increase watering frequency.
